What is a Icehouse:  an icehouse in a cellar is a structure, used in the past, to keep food and drinks cool, taking advantage of the natural insulation of the subsoil. It was a niche dug into the walls of the cellar, where the ice collected in the winter was stored.
The ice was covered with insulating materials, such as straw or sawdust, to slow down its melting, this creating a cold place suitable for preserving meat, dairy products and drinks in an era when refrigerators did not exist.
Today, an icehouse in a cellar can be a fascinating historical element, witness to ancient preservation techniques, or it can be adapted as a cool space to store wines.
